Abstract

The last years of the 20th century and, to a much greater extent, the beginning of the 21st century,
promoted the study of water as an object of social sciences. In countries like Mexico, Cuba and
Venezuela a thematic development has been very prolific, to the point of constituting a very solid
research tradition. In Argentina, on the contrary, historiography has discovered liquid as a recent
axis in local and regional studies. In this article we intend to make a review of the current state of
the thematic lines addressed around water, with special attention to those that have dealt with the
relationship between agricultural production and sugar refining in the sugar mills of the north of
the country. With this we intend to draw lines of dialogue with spaces already consolidated in other
Latin American regions, establishing contrasts and possibilities of analysis in new studies.
